Kid Icarus features an enemy called Eggplant Wizard which has an eggplant cane that shoots out eggplants that turn the main protagonist into an eggplant.
Eggplants in Super Smash Bros. Brawl appear on the stage called The Summit. They can be eaten to replenish the characters’ health. There’s also a trophy called Vegetables in which one of the featured vegetables is an eggplant.
Super Smash Bros. Melee features a trophy of a character called Eggplant Man which originally debuted as an enemy in Wrecking Crew (NES) game. This trophy can only be won in the lottery mini game.
Princess Tomato in the Salad Kingdom features a character called Miss Eggplant which owns and operates a Juice Bar. There’s also the Eggplant Soldier which appears late in the penultimate chapter and he’s one of the last enemies you have to fight.
Eggplants in Ice Climber’s opening cut scene are shown to be stolen by the condor. Eggplants also are featured in the first level’s bonus stage. There’s four of them, and they’re worth 300 points apiece.
